So, Easter is here, almost anyway. I wasn’t really planning on making something Easter-y but all the pretty and yummy looking posts on all social networks are so inspiring that I decided to make a pre-Easter treat. My son is seventeen now and way over past his Easter egg-hunting years but thought I’d make something that would remind him of those times. He loves pavlova and I am sure he would love this for a treat. Crisp on the outside and chewy on the inside mini pavlovas, then spread with some whipped cream and finally topped with chocolate-coated marshmallow egg. Not tempted yet? Ingredients
(Makes 6 mini pavlovas)
- 4 egg whites
- pinch of salt
- 1 cup sugar
- 2 teaspoons cornflour
- 1 teaspoon white vinegar
- 1 cup thickened cream, whipped until soft peak forms
- rainbow sprinkles, for decoration
- 6 chocolate coated marshmallow eggs
- Preheat oven to 240C degrees. On two separate baking paper sheets, trace three circles on each paper, each circle with a diameter of 10 centimetre. Wet papers then squeeze out excess water. Place sheets of paper on two oven trays.
- Place egg whites and salt in a very clean and dry mixing bowl. Using electric beaters, beat until soft peak forms. Add sugar gradually, beating constantly after each addition until mixture is thick and glossy and sugar has dissolved.
- Using a metal spoon, fold in cornflour and vinegar.
- Spoon mixture onto prepared lined baking trays. Lightly flatten the tops and smooth the sides with a spatula to create a cake shape. With a skewer or pointed knife, run it along sides as if trying to cut the pavlova in half. This is to create the “nest” look.
- Reduce oven temperature to 160C degrees. Bake mini pavlovas for 45 minutes or until pale cream in colour and crisp.
- Remove from oven while still warm, transfer pavlovas onto individual serving plates. Use a big spatula to carefully remove pavlovas from the paper so they do not get squashed. Sides may crack a bit but that is normal.
- Spread top of pavlovas with whipped cream. Top with rainbow sprinkles. Lastly, carefully place a chocolate-coated marshmallow egg on each pavlova.
