The mere fact that you are still eagerly reading this post means one thing – you (like me) are one of the curious ones with adventurous taste buds. Yes, you got enticed by the “crocodile” part. I have had crocodile burgers a few times and really enjoyed them. Seriously, if you did not know it was crocodile meat, you would probably think you were having a seafood or even a chicken burger. I spotted this packet of crocodile mince at the local supermarket and thought I would make some burgers. I changed my mind and decided instead to make san choy bow, which is usually prepared with pork or chicken mince. Crocodile meat tastes very similar to chicken and frog legs (yes, I love frog legs as well). The flavours you would normally pair with chicken will go well with crocodile meat. This san choy bow recipe has got all the tasty Asian flavours of ginger, garlic, sesame oil, oyster sauce, shallots with added crunch of water chestnuts, bean sprouts and crispy fried noodles. Let us not forget of course the fresh crisp lettuce cups where you place a scoop of the mix and using your hands, fold or roll the lettuce before having a bite. So, give in to your adventurous side and try this exotic dish, which is by the way great served as an entree.
Ingredients:
- 300g crocodile mince
- 1 teaspoon sesame oil
- 1 garlic clove, crushed
- 1/4 teaspoon ginger, grated
- 200g water chestnuts, chopped
- 1/2 cup shallots, chopped
- 1/2 red capsicum, chopped finely
- 2 tablespoons chopped coriander leaves
- 1/2 cup bean sprouts
- 1/2 crispy fried noodles
- 1/4 cup oyster sauce
- 1/4 cup soy sauce
- 1 big lettuce head
Method :
- Over medium heat, cook mince in sesame oil until white and golden.
- Add the garlic, ginger, water chestnuts, shallots, capsicum, oyster suce and soy sauce. Let it sizzle for a couple of minutes.
- Add the bean sprouts and coriander leaves. Stir fry for a minute or two.
- Remove from heat. Stir in half the crispy fried noodles.
- Serve the mixture in cupped lettuce leaves. Top with more crispy fried noodles. Serve immediately.
